Oatmeal-Current Muffins

Ingredients for 12 Muffins

80 g butter
120 g Organic cocnut sugar
8 g Vanilla Sweet
eggs
140 g wheat
2 TL backing powder
80 g oat flakes
200 g yoghurt
200 g currents (red or black)

How it's done:

Mix the butter with the Organic cocnut sugar and the Vanilla Sweet until frothy. Add the eggs and stir. Mix the flour with the baking powder and add to the dough together with the oatmeal and the yoghurt. Finally, carefully add the cleaned currants.

Preheat the oven to 200° C. Add a paper plate to the muffin plate and fill it about 2/3 with the muffin dough. Bake in the preheated oven for about 25 minutes.
