That's how it's done:
Process low-fat curd cheese, ground almonds, xylitol and coconut flakes to a solid mass. Form small balls from the mixture and work a whole almond kernel into each ball. Then roll the balls through the coconut flakes and place on a plate.
Place in the refrigerator for about 4 hours to make them firmer.
