Thermomix Yoghurt-Lemon Cake

ingredients

160 g NO SUGAR SUGAR Erythritol+Stevia
200 g yoghurt
300 g wheat flour
1 package baking powder
3 eggs
100 g tasteless oil
1 organic lemon, juice and zest
1 dash  salt

how it's done:

1. Weigh all ingredients in the mixing bowl of your Thermomix, grate the lemon zest (caution: grate only the yellow peel!), juice the lemon and add to the bowl. Mix everything at level 5 for 20 seconds into a smooth batter.

2. Pour the batter into a springform pan lined with parchment paper and bake in the oven at 180°C for about 40-50 minutes. After 40 minutes, use a wooden stick to test if the cake is finished. If the cake turns brown too fast, cover it with a piece of aluminum foil.

Joan's conclusion: The result? Erythritol+Stevia is very easy to use: it looks exactly like regular sugar and should be substituted one-to-one. Nonetheless, instead of using the designated 200g - 250g of sugar, I used only 160g of Erythritol+Stevia. Firstly, I think it's sweet enough, secondly it tastes better. Aha! So there is an aftertaste? Yes and no. I chose a cake with only a few ingredients, so the individual ingredients could be tasted. The cake was eaten and rated by 6 different people. Everyone, except for 2 people said that the cake tasted really good. Nobody knew that I used a sugar substitute. 2 people (and myself) tasted a faint bitter aftertaste. Not striking, though. Regarding the texture there was no difference, the sugar substitute is easy to work with. Since this is a very simple cake, I think it tastes best with a blob of whipped cream (which you can sweeten with Erythrit+Stevia ), and my homemade peach marmalade.Yummy!
