Juicy Carrot Courgette Apple Cake

Ingredients

500 g 

apples

200 g 

carrots

200 g 

courgette

100 g 

ground hazelnuts

75 g

Erythritol

75 g 

Xylitol

3

eggs

1 pinch

Pink Himalayan Salt

100 g 

oatmeal

100 g

potato starch

1 pack  baking powder

That's how it's done:

Grate the apples, carrots and courgettes finely and put them in a bowl together with the ground hazelnuts. Beat the eggs with the xylitol, erythritol and pinch of salt until foamy and add to the grated apples, carrots and courgettes together with the oat flour, starch and baking powder. Mix the ingredients well and place in a large springform pan or on a baking tray lined with baking paper.

Bake in a preheated oven at 165°C (convection oven) for approx. 45 - 60 minutes.
After cooling down sprinkle with some Erythritol+Stevia powder.
