how it's done:
Peel the apples and grate them coarsely. Mix margarine, Xylitol, Vanilla Sweet, egg yolks and lemon juice until foamy. In a separate bowl, mix flour, baking powder, cocoa powder and the ground nuts, then add to the margarine-mixture. Beat the eggwhites until stiff and add to the batter together with the grated apples. Bake at 180°C for about 35 minutes.
Beat the 4 eggwhites over a hot water bath, adding Xylitol, creating a meringue. Pour the meringue on top of the cake and bake again for about 7 minutes. Sprinkle with grated chocolate (using a grater to grate Full-Cream Milk Chocolate) directly after baking.
Our Tip: Producing a meringue needs some practice; the cake is just as good without the meringue.
